this morning's breakfast...

lemon ricotta pancakes with strawberries and maple syrup.
i got the recipe from smitten kitchen but i didn't used her apple recipe. i instead macerated strawberries which, i think, lend a freshness to the pancakes.

Were they light and fluffy like ones in a restaurant? I've been searching for the perfect recipe...

Yes!! I think its the meringue that made fluffy
